Ingredients:

  • Skirt steak – 1 kg or 2 lbs
  • Garlic cloves – 3 or 4
  • Vegetable oil – 1/3 cup
  • Extra vegetable oil to saute the vegetables – 2 tsp
  • Salt – 1 tsp
  • Fresh lime juice – 4 tsp
  • Large white onion – 1
  • Green bell peppers – 3
  • Ground cumin – 1/2 or 1 tsp
  • Green onions – 2
  • Tequila – 4 tsp (optional)

Steps to Prepare

  1. To get a flavorful and juicy taste, marinating the beef is necessary; hence, prepare a marinade of lime juice, garlic, cumin, salt, and oil. If you do not mind having a bit of alcohol, then add 4 tsp of tequila, which will also enhance the flavor.
  2. Once the marinade is prepared, add in the steak cut into sizes of your preference and allow it to marinate for at least 4 hours (you can also allow it to sit overnight for an even richer flavor).
  3. For maximum efficiency, while the meat is being marinated, slice up the different varieties of onions and bell peppers into thin strips and place them aside.
  4. Next, heat up a skillet and allow the pieces of meat to cook evenly on both sides for at least 9 minutes on each side.
  5. After that, in the same skillet, pour in 2 tbsp of oil along with the residue juices of the steak and saute the veggies for 3-5 minutes until they are a bit crispy.
  6. Serve the dish along with warm fajitas (either corn or flour).
