This cake has triple layers of coconut, lemon curd, and lemon cream cheese frosting. If you’re looking for summer in a cake, this has sunshine written all over it.

Ingredients

Cake

  • 5 eggs, separated
  • 1/4 tsp cream of tartar
  • 2 cups sugar
  • 1/2 cup butter, softened
  • 1/2 cup canola or vegetable oil
  • 2 tsp vanilla extract
  • 1 1/2 tsp almond extract
  • 2 cups all purpose flour
  • 2 Tbsp corn starch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut milk
  • 1/2 cup whole milk
  • 1/4 cup Greek yogurt or sour cream
  • 1 cup coconut, sweetened flaked

Frosting

  • 12 oz cream cheese, softened
  • 12 Tbsp butter, softened (1 1/2 sticks)
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2-3 Tbsp heavy cream
  • 5-6 cups powdered sugar
  • salt to taste
  • 1/2 cup shredded coconut, sweetened
  • 3/4 cup lemon curd

Topping

  • 2 cups toasted coconut
  • lemon slices, optional
